MUST MAKE Mediterranean Salad

Howdy!  Have you had a Fat or Fit Tuesday?

Although I have a really bad headache (pregnant problems) and decided I would double workout tomorrow so I could rest a bit tonight, I ate some beautiful food today!  Not once did I crave a paczki but I did splurge and get Starbucks.

So here were my eats for today:

Breakfast- cinnamon raisin bagel with non dairy cream cheese + grande soy decaf caramel latte

Lunch- Mediterranean salad + handful of green grapes

Snack- 20 plain almonds + banana

Dinner- homemade tomato soup + grilled sheese

All day- 9 glasses of water

I realize that this is not as clean as I normally eat, but I did feel satisfied and there’s nothing worse than stressing about food while pregnant.  Yes, it’s important to eat healthy and get proper nutrition, but stressing about it is just as bad as eating a ton of junk.  Again, it’s all about balance.

Ingredients:

  • 1 seedless cuke, diced
  • 1 pint grape tomatoes, halved
  • 3 T EVOO
  • 3 T red wine vinegar
  • 1 t garlic
  • 1 can chickpeas, drained & rinsed
  • 1/2 c olives
  • 1/4 c red onion, diced
  • 1 t dried oregano
  • 3 c romaine lettuce (or more colorful variety)
  • 1/2 c feta cheese
  • crushed pita chips

Cut the cuke and tomato, add to strainer and sprinkle lightly with salt.  Let sit for 10 mins to drain while you prep.  Mix EVOO, vinegar, garlic, chickpeas, olives, onion, and oregano in a medium bowl.

After 10 mins, dab the tomato and cuke with paper towel and add to bowl.  Mix well.  Layer lettuce and mixture then top with a little feta cheese and crushed pita chips just before serving.

(This would be easy to layer in a mason jar- for lunch the next day- similar to ones seen on Pinterest!)

Side note on the tomato soup.

I will post the recipe tomorrow, but I LOVED it.  Not so much because I climbed in bed with my cup and heating blanket to catch an episode of Big Bang Theory (okay maybe that’s a huge part of it) but it had fantastic flavor!
