Brownies, Waffles, Popsicles, OH MY!

You heard that right!

I have been so busy in the kitchen lately.  I’m freezing produce so I can save money this winter.  Look for a post all about that coming soon.  For now, I will share my three favorite splurges but a healthy version!

First up…

I was inspired to make something chocolate after reading about the “We Should Cocoa” Challenge on The Chocolate Log Blog.  I was not thrilled with other recipes I saw for healthy brownies, so I decided to make my own since I always have my Shakeology nearby.  These taste like dark chocolate and it’s hard to stop after just one.  Why should you?  I sure didn’t.  I ate one a day and had zero guilt snacking on them as a pre-workout!

I topped my brownie with PB ice cream- 4 frozen bananas + 2 T peanut butter in blender.

I have also topped it with melted peanut butter.

I topped my cupcake with avocado frosting.  Instead of using powdered sugar, I used a little bit of vanilla Shakeology, coconut sugar, and vanilla extract.  I froze it in a baggie then squirted the frosting from one corner I had snipped.

Chocolate Shakeology brownies (or cupcakes!)

  • 3 scoops chocolate Shakeology
  • 5 eggs (or 9 egg whites)
  • 3/4 c pumpkin
  • 2 t baking powder
  • 2 T coconut spread
  • 4 t coconut sugar (you could also sub agave)
  • 3 T cocoa powder

Preheat oven to 350.  Spray pan or cupcake liners well with cooking spray.  Mix all ingredients in a medium bowl.  Pour the batter into a brownie pan or individual cupcake liners.  Bake 20 minutes or until toothpick inserted into center comes out clean.  (Eat within a few days, or store in the freezer.)

I am still working on some frosting recipes because I want them to be as guilt free as possible, but not taste like dog shit.  Some ideas I have are: coconut, coconut lemon, vanilla, pumpkin, and banana.  Any other suggestions?  I will keep playing (muwahhahaha!) and get back to you when I find one I love.

I was checking out wasting entirely too much time on Pinterest when I came across these vegan waffles.  They were great but I did have to leave them on the waffle iron extra long because they were falling apart so easily.  I decided to smash up fresh strawberries, blueberries and chia seeds in a bowl and drizzle slather it on top.  So GOOD!


Summer is basically over and one thing I wanted to do and never got around to was make popsicles!  Enough was enough already…I bought my molds at Libby Glass and got to it.

I simply sliced up strawberries and blueberries then layered them in each mold.  I used my Jack LaLanne juicer to juice two oranges and poured it into the mold.  I simply popped the lids on and into the freezer they went!  They are fresh, fruity, sweet, but there is no added gunk!  Refreshing!
