Chocolate Shakeology Ice Cream Cups {Guilt Free}

Happy hump day!

What are your plans?  I am doing some crafting and getting ready for our ornament party for girl’s night tomorrow!  I can’t wait for the food we discussed earlier…

I’m normally a vinegar, salt, tangy type of gal.  I honestly don’t know what my deal is but lately I have had an urge for sweets.

I have seen many posts about making chocolate Shakeology peanut butter cups like these and these.  I decided I would go one step further because a girl simply needs peanut butter and banana ice cream once in a while.

How about this instead?

Yes.  You read that right.  Indulge.  Let loose.  It’s pretty guilt free!

These take less than 10 minutes.  You will need a blender, Ziploc bag, and tinfoil cupcake liners.

Melt coconut oil in a small bowl.coconut oil
Pour melted coconut oil into the chocolate Shakeology and mix well.

Put some melted chocolate in each liner.  Place in freezer while you make your “ice cream.”  Blend banana and peanut butter together.

Put ice cream in a bag and snip the corner.  Add some of the mix to each cup.

Top with remaining chocolate mix.

Place in freezer for about 10 minutes or until frozen.

These satisfy my urge and I can’t even feel bad about snacking on one post workout!  You could also use the mini foil cupcake liners but my store didn’t have them.

Chocolate Shakeology Ice Cream Cups

Serves 10-12
Prep time 10 minutes

Ingredients

  • 2 tablespoons peanut butter
  • 1 Medium banana
  • 3 tablespoons coconut oil
  • 5 tablespoons chocolate Shakeology

Directions

Melt the coconut oil in a microwave safe bowl.
Add chocolate Shakeology to melted coconut oil and stir well.
Fill each tin cupcake liner with enough chocolate mix to cover the bottom. Place cups in the freezer.
Add peanut butter and banana to a blender. Blend until creamy. Add the mixture to a Ziploc bag and clip one corner.
Remove cups from freezer and top with banana ice cream mixture. Top with remaining Shakeology mixture. Place in freezer for 10 minutes.

**Store in an air tight container in freezer for up to three months.**
