No-Grain Train Full Steam Ahead

I really really needed a break today. I was feeling pretty overwhelmed and I am literally sitting at the YMCA to type this post with a hot cup of coffee just to get a minute of peace and quiet.

Being a mom, working or stay-at-home, is tough. No one understands this until they experience it. I realize now that I never gave moms enough credit!

You may or may not recall me sharing that my new grain free adventure has begun. I wanted to recap how week one and two have gone so far because I have been getting so many questions about the meals I posted on my Facebook page and Instagram. Each post this week will include a recipe a meal from my grain free meals so keep checking back daily!

Breakfast: I have been typically enjoying eggs with a meat, cheese, healthy fat and veggies. I usually make two days worth and then only have to cook every other morning. You could easily do this the night before work so you have a healthy breakfast to go! I feel so satisfied and don’t need the toast.

Snacks: I would not be successful with snacks if I did not prep them ahead. My downfall would be cheeze-its, pretzels, etc but I have snacks ready to grab and go so I haven’t been tempted.

Lunch: Rob and I have been eating salad just because it is so easy to throw a bunch of pre-cut veggies onto a plate. I either add some chicken or a healthy fat along with cheese and one tablespoon of dressing. I have been making my own dressing as well and I can share the recipe if you would like; just leave me a comment and I will get to it this week.

Dinner: I have really been loving my dinner lately! I keep mixing it up and started a Grain Free Pinterest board to stash my options as I find them. Feel free to peep it!

As you can see, I am eating attempting to balance veggies with protein and healthy fats. I have been allowing myself one serving of fruit per day but none if I have Shakeology as my snack. The recipe for today is for Tropical Strawberry Shakeology!

Paradise Shakeology

Serves 1
Prep time 2 minutes

  • 1 scoop Tropical Shakeology
  • 4 strawberries (frozen)
  • 1 kiwi (peeled)
  • 1/2 cup unsweetened almond milk
  • 1/2 cup orange juice
  • 1 teaspoon coconut flakes (unsweetened)

Add all ingredients except coconut to the blender. Blend until smooth.
Pour shake into a pretty glass. Garnish with coconut flakes or a slice of fruit. Add a mini umbrella for extra paradise!
Drink every last drop. If you lick the glass, we won't judge!

Now let’s chat about what changes I am noticing and why I am still chugging along track with the No-Grain Train (that was entirely Rob’s idea…. grain train… SMH!)

I have had zero itching except the two nights I had a little bit of grains. (bread and pancake)
My skin is glowing. I have been skipping makeup!
I am always full.
I am having zero cravings.
I am seeing gains with my fitness goals.
I have had zero headaches.

I have been very sensitive/emotional. It could be stress or it could be that my body is detoxing!

So far, I am really loving this and although it’s closer to a Paleo diet, I am still eating beans so it basically modifies Paleo. Rob has been hanging with me for the most part, too which helps tremendously!

Make sure you check back each day to see a new recipe; tomorrow is Chicken Sausage Spaghetti Squash boats along with a teething update and GIVEAWAY!

Don’t forget to PIN that recipe!
