Dinner & Fitness For Two

I am not sure how the stars hearts aligned to give Rob Valentine’s Day off but they did!

Normally, he would be at work and we would be picking an alternate date for special occasions and Holidays.  Some people might hate it, but we make do with what we have.  It’s part of being behind the man in blue.  He loves his job.  I love him. We make it work.

So to celebrate the fantastic day of love I left him a card and his FAVORITE cookies in the bathroom as a surprise last night.

Our morning and day will be the normal routine of quality family time, lots of coffee and maybe a nice dinner out with his grandma and parents.  Who knows!?  I am not making any specific plans besides whooping his ass in Scattergories like I did last week!

I wasn’t worried about whether he got me a card, flowers, or anything else.  I just like having him tell me he loves me and snuggling with me on the couch.

Of course, the idea of getting surprised with flowers is nice, but in my world, flowers = death.  I would much rather a surprise that I can use for a long time.  Like a pair of shoes, a new top, some sweet pictures of us, something handmade, etc.  Flowers are expensive and last a week!

So in honor of Valentine’s Day, I am sharing a few things with you:

And finally, here is a delicious dinner for two!  Make sure you ‘pin’ it because you will not miss the pasta and want this time and time again.

Chicken Sausage Spaghetti Squash Boats

Ingredients

  • 1 spaghetti squash
  • 1 cup marinara (or tomato sauce)
  • 3 pieces chicken sausage (I prefer Meijer spinach & mozzarella)
  • 1 Medium onion (chopped)
  • 1/2 cup mozzarella
  • 4 tablespoons ricotta cheese
  • salt and pepper (to taste)

Directions

Preheat oven to 400. Cut spaghetti squash in half lengthwise. (You may need to soften it in microwave first.) Scoop out and discard the seeds and center. Poke holes in the skin of the squash to help it cook evenly.
Place the squash on a baking sheet, flesh side up. Drizzle with olive oil and bake for 40-50 minutes or until soft when poked with a fork.
Meanwhile, cut up the chicken sausage and add to the pan with onion. Cook until onion is soft.
Once the squash is tender, use a fork to scrape the insides. Remove half of the spaghetti from each squash piece and add it to the pan with chicken and onion. Add marinara and mix.
Place the marinara, squash, onion and chicken mixture on the remaining spaghetti in each squash half. Top each half with 1/4 cup mozzarella, and 2 T ricotta cheese. Season to taste with salt and pepper.
Place spaghetti squash boats back into the oven for 5-10 minutes or until cheese is melted and bubbly.

It was so yummy and we both could only eat half.  I love spaghetti squash because it fills me up but it’s not carb heavy like pasta is.  Of course I love that it’s grain free as well.
