Rob describes these bad boys as “flavor explosion.”

We made them the other night when we were in the mood for something healthy with just a slight splurge.  At least making them with turkey bacon and using fresh vegetables and avocado helps keep it clean.  Another option is to go bunless or check out Lauren’s recipe for spinach twist!

I think I have had the best Valentine’s Day of my life.  Rob and I kept it low key.  We got a “quickie” workout in.

We enjoyed the entire day with Quinn and after putting her to bed, we played Yahtzee and had a few beers.

It was magnif to just have a family day!  Here’s the recipe before I go!

Bacon Bean Avocado Turkey Burger

Serves 4-5
Prep time 5 minutes
Cook time 20 minutes
Total time 25 minutes
Dietary Gluten Free
Meal type Main Dish
Misc Serve Hot

  • 1lb turkey burger
  • 1/2 cup black beans (rinsed and drained)
  • 1 teaspoon garlic (minced)
  • 1 tablespoon Spicy Four Pepper Seasoning ((from Tastefully Simple))
  • 1/2lb turkey bacon ((I prefer Applegate Farms))
  • 2 avocado (peeled and mashed)
  • 1 teaspoon red onion (chopped + a few slices)
  • 1 teaspoon lime juice
  • salt and pepper (to taste)
  • whole grain buns
  • pepperjack cheese
  • tomato (sliced)
  • buffalo sauce ((I prefer Frank's Red Hot))

In a large bowl, mix the turkey bacon, beans, garlic and four pepper seasoning together. Form into patties, 1 inch thick and place on grill. Cook until turkey is no longer pink.
In a small bowl, mix the avocado, lime juice, chopped red onion, salt and pepper to taste.
Start cooking the turkey bacon using which ever method you prefer. (oven, microwave, stovetop.)
Once bacon and burgers are done cooking, top them with cheese, tomato, red onion and place on a bun smothered with guacamole. You can also add Frank's Red Hot and ranch for an extra punch of flavor!

How was your day with your sweetie?
