Kettle Crack Corn and I Don’t Care

Yes.  I do sing this title.  Just in case you were wondering, or you might even be doing the same.

This popcorn I conjured up during my nap the other day will wow you!

I was taking a power nap (because I am a mom) and I started dreaming about blogging.  I have some other awesome ideas, but this kettle corn was one of them.  Earlier that day, I had seen a post from another blogger who used Tahini, coconut sugar and salt as their ingredients.  (I can’t remember what blog it was, so if it was YOU, leave me a note and I will link!)  While I love tahini, I am hesitant at times to try risky things like this.  So in my dream, I swapped out the Tahini for my miracle oil.

And this gem was born.  (Cue rays of sunshine and sweet symphonies of baby giggles.)

Healthy Kettle Corn

Serves 6
Prep time 1 minute
Cook time 5 minutes
Total time 6 minutes
Dietary Vegan, Vegetarian

  • 1/4 cup coconut oil
  • 1/2 cup popcorn kernels
  • 1/4 cup coconut sugar
  • 1 teaspoon sea salt


In a large pot, heat oil on medium-high heat. Add three corn kernels and wait for them to pop.
As soon as the kernels pop, add the sugar and the rest of the kernels. Cover the pot with a lid.
Shake the pot to cover all of the kernels with the sugar and oil mixture. Continue heating and shaking until all the kernels are popped.
Remove the lid and popcorn from heat. Sprinkle salt over the finished popcorn. Store in an airtight container for up to three days.

I started heating the oil and added three kernels, then waited for that first pop.

Then it got to poppin’!  When it was done, I sprinkled on the sea salt and voila!

I just figured you might want this for a healthier family snack when you get those munchies late at night.  Maybe you want to store it in an airtight container and use it for snacks during the week.
