I wanted to share this quick recipe from my most recent eBook: 21DFXGuide. This guide comes with recipes, meal plans and grocery lists (+more) to guide you through the entire three weeks of 21 Day Fix Extreme.
If you don’t already know what Extreme is, you can check it out on my site. It’s a more intense and cleaner eating version of 21 Day Fix. Basically it’s the steroid version, minus the steroids. Any recipes you see for 21 Day Fix Extreme are also allowed for 21 Day Fix, but not always vice versa.
Back to the recipe…. sorry I tend to get side tracked.
I wanted these recipes to be 1) easy for you 2) decent for the entire family 3) able to be cooked in batches 4) 21 Day Fix approved.
Enter these easy Greek Hard Boiled Eggs!
In case you didn’t already have a light bulb moment, use all of your colored Easter eggs for this!
The center tastes like Tzatziki and the balsamic vinaigrette drizzle adds a hint of sweetness to give you the best of both worlds: salty and sweet. Here is a sneak peek of the recipe taken from a page in my eBook!
+ You can make these up ahead of time so they are grab and go
+ Add some baking soda to your boiling water to help them peel easier.
+ You can have up to 8 eggs to be considered 1 Red container, but do not add any more of the other ingredients. (8 eggs without the yolk is approved by Autumn because of the calorie count.) If 8 eggs seems like too much at once, you can always add the rest crumbled to a salad or eat the other few later in the day Greek style.
+ Enjoy with tomato or without! They are excellent both ways. I like to use a roma tomato as the bed and place my eggs on top.
Let me know what you think when you make them. I couldn’t stop eating them during taste testing!
