I wasn’t even going to post today, but this just can’t be ignored.
I AM OBSESSED WITH ZOODLES.
They are so easy to make, uber healthy and I can enjoy them during my carb-free cycles. It takes me about 2 minutes to spiralize them which is way faster than making pasta. I’m all for saving time in case you haven’t noticed!

I used 2 zucchini, 1 red bell pepper, 1/2 onion, 4 celery stalks. Chop up the veggies in small pieces and spiralize the zucchini. In a separate bowl you can mix up about 1 cup of plain Greek yogurt, 3 T dijon mustard, garlic salt, dried dill, sea salt, and pepper. I didn’t really measure (sorry, I’m kinda lazy) but I just added it to taste.
This is the spiralizer I use. I got it for Christmas and I don’t know why it has taken me so long to use it. It is very easy to use as you can see but even more importantly, it’s a breeze to clean. AMEN!
Whip this up ASAP. I promise it won’t let you down. You can make it ahead of time and just add the dressing when you are ready to serve. We will be making this for Quinn’s second birthday party!
