Peanut Butter Buckeye Cheesecake for Football Fit-natics

It’s finally feeling a bit like fall here in Ohio and I LOOOOOVE it.

Fall is life.  I obsess over scarves, riding boots, getting coffee, visiting pumpkin farms, smelling (and drinking) all the cider, taking Quinn for walks and watching football.  Oh, how I heart fall.coffee

My husband and I love college football and while I am a Michigan fan, he cheers for OSU.  I have to admit, Buckeye Balls are my favorite.  I mean, who can resist peanut butter and chocolate?!

I won’t be the hero here.

The problem with Buckeyes is that I want to eat a few extra calories literally all of them , so I decided to team up with Silk for the #MeatlessMondayNight challenge to create a version of Buckeye Balls that I can eat my heart out, but still not bust my nutrition.

Instead of tailgating with balls, I made cheesecake!  Whip this up in no time and take it to your next tailgate party or enjoy it as dessert while watching Monday Night Football.

Buckeye Cheesecake for Football Fit-natics! I use Quest protein powder, PB2 and Silk almond milk to keep this high protein and low carb!This is seriously so good!  (Yes, I allowed myself one bite!) Rob said it’s not as sweet as a regular cheesecake, but it’s great for people who are trying to be conscious about their health.   The ingredients in this make me so happy; high protein and lower carb!  I feel like I am indulging, but these are much better options for our family.  I can have my cake and eat it, too!

I decided to use Quest protein powder for an extra protein punch that isn’t loaded with sugar.  The PB2 is lower calorie than regular peanut butter and of course still tastes amazing.  The other special ingredient is Silk Dark Chocolate Almond Milk because life just isn’t right without it!  Buckeye Cheesecake for Football Fit-natics! Buckeye Ball Cheesecake

Ingredients

  • 1 cup raw unsalted almonds
  • 1/4 cup chocolate PB2 (or any powdered peanut butter)
  • 1/2 cup Dark chocolate Almond Milk (I used Silk almond milk)
  • 1 cup plain 0% fat Greek yogurt (I used Chobani)
  • 1 Large egg
  • 1 Large egg white
  • 1 cup pumpkin puree
  • 8oz fat free cream cheese (softened)
  • 2 scoops Quest peanut butter protein powder

Directions

Preheat oven to 350. In a blender, combine the almonds, Silk almond milk and powdered peanut butter. Blend until you have a paste. Spread the mixture onto a greased 8 inch pie pan.
In a large bowl, use a mixer to combine the rest of the ingredients. Mix until a thick batter is formed and pour it onto the crust. Before pouring, you can top with crust with options like sliced banana, dark chocolate chips, etc. Once the mix is evenly spread onto the crust, bake at 350 degrees for 30 minutes.
Refrigerate to fully cool before cutting and serving. You can top the cheesecake with more PB2, chocolate chips, sprinkle of cocoa powder, whipped cream or whatever else sounds yummy to you!

I just blended the Silk Almond Milk, almonds and Chocolate PB2 in my mini blender and spread it into a greased pie pan.

In a large bowl, I mixed all the other ingredients to make the batter and poured it on top of the crust.  Bake at 350 for 30 mins then refrigerate before cutting and serving.

 Other ideas to knock your cleats off:

+ Try Quest vanilla protein powder and add pumpkin pie spice/cinnamon or even layer the bottom crust with fresh slices of banana and shredded coconut.

+ Top the crust with dark chocolate chips before topping it with the batter.

+ Top each slice with a layer of creamy PB2, shaved dark chocolate or chips and whipped cream!

+ Make mini buckeye balls and add one to each slice before serving.
