Happy Tuesday, folks!
It’s finally feeling a bit like fall here in Ohio and I LOOOOOVE it.
My husband and I love college football and while I am a Michigan fan, he cheers for OSU. I have to admit, Buckeye Balls are my favorite. I mean, who can resist peanut butter and chocolate?!
I won’t be the hero here.
The problem with Buckeyes is that I want to eat
a few extra calories literally all of them , so I decided to team up with Silk for the #MeatlessMondayNight challenge to create a version of Buckeye Balls that I can eat my heart out, but still not bust my nutrition.
Instead of tailgating with balls, I made cheesecake! Whip this up in no time and take it to your next tailgate party or enjoy it as dessert while watching Monday Night Football.
This is seriously so good! (Yes, I allowed myself one bite!) Rob said it’s not as sweet as a regular cheesecake, but it’s great for people who are trying to be conscious about their health. The ingredients in this make me so happy; high protein and lower carb! I feel like I am indulging, but these are much better options for our family. I can have my cake and eat it, too!
I decided to use Quest protein powder for an extra protein punch that isn’t loaded with sugar. The PB2 is lower calorie than regular peanut butter and of course still tastes amazing. In a large bowl, I mixed all the other ingredients to make the batter and poured it on top of the crust. Bake at 350 for 30 mins then refrigerate before cutting and serving.
Sink your teeth in!
Other ideas to knock your cleats off:
+ Try Quest vanilla protein powder and add pumpkin pie spice/cinnamon or even layer the bottom crust with fresh slices of banana and shredded coconut.
+ Top the crust with dark chocolate chips before topping it with the batter.
+ Top each slice with a layer of creamy PB2, shaved dark chocolate or chips and whipped cream!
+ Make mini buckeye balls and add one to each slice before serving.
