My friend Christine I met in Cleveland while we were both competing.  We started talking while waiting backstage and quickly realized we have a lot in common.  As busy moms, we both like to eat healthy and find yummy food that fits our goals.

Christine came up with a blend of a few ingredients to make a cake while she was prepping for her show.  She wanted something to satisfy her sweet tooth, but also something that fit her macros so she could get stage ready.  Little did she know, she was sitting on a gold mine!

Over the past month, Christine has grown Lil Buff Bakery and is selling Buff Cakes faster than she can make them!  I am so happy for her for starting this home business and helping people.  It’s been fun to watch things fall into place for her and her dream come to life.

I got to test some out and I’m hooked.

What I love most about Buff Cakes:

  • You can change up the flavor so easily
  • They are macro friendly
  • They taste amazing
  • The texture is like a real cake
  • They are affordable ($20 for 5!)
  • They require so few ingredients
  • They cook in under 3 minutes in the microwave
  • You only have to clean 1 dish (because moms really don’t need any more dishes to wash)

Here are the recipes we came up with last week.  When you make yours, be sure to calculate the ingredients to fit your macros!

Apple Pie

High protein IIFYM Lil Buff Cake Mix (via Lil Buff Bakery)

  • 1/4 chopped apple
  • 2 T chopped pecans
  • 1 applesauce pouch
  • 1/4 c milk variety (we prefer almond milk)
  • 1 egg white
  • 1 Buff Cake pouch
  • (optional: cinnamon, fat free whipped cream)

Mix some of the apple, some cinnamon, applesauce, egg white, milk and the Buff Cake mix in a microwave safe dish.  Top with remaining apples and pecans and dust with more cinnamon.  Microwave 2:30-3 minutes until it’s fully cooked in the center.  Let cool slightly.  Top with whipped cream, Arctic Zero or just eat plain!

Almond Joy

High protein IIFYM Lil Buff Cake Mix (via Lil Buff Bakery)

  • 4 T toasted coconut flakes
  • 10 chopped almonds
  • 2 T chocolate chips
  • 1 ripe banana, mashed
  • 1/4 c milk variety (coconut almond milk is perfect!)
  • 1 egg white (I used chocolate caramel MuscleEgg)
  • 1 Buff Cake pouch

Mix together all ingredients in a microwave safe dish but save some coconut and almonds for topping.  Cook for 2:30-3 minutes or until fully cooked in the center.  Let cool slightly.  Top with whatever will fit in your macros!

Funfetti

Mix all ingredients in a microwave safe container.  Cook 2:30-3 minutes or until fully cooked in the center. Top with Arctic Zero ice cream, Fat free whipped cream or frosting if it fits your macros.

Chocolate Peanut Butter Banana

High protein IIFYM Lil Buff Cake Mix (via Lil Buff Bakery)

Mix all ingredients in a microwave safe dish.  Cook 2:30-3 minutes or until center is fully cooked.  Top with peanut butter frosting and whatever your macros will allow.
