While I was on a mini-break from prepping for North Americans, I just wanted pizza. It was my time to indulge a little, so when the 4th of July weekend came and all I could think about was making barbecue pizza; onion, al fresco Sweet & Smokey BBQ Chicken sausage, peppers, cheese, barbecue sauce (and maybe pineapple) on that bad boy and grill it up.
Funny story though…
The sausage was so tempting (and clearly delicious) that my husband grilled it up and it was GONE before the weekend came!
Rob ate it with broccoli and sweet potato for lunch. That same day, he put the sausage on a salad for dinner. Since I didn’t even get to try it, I asked him to let us know what he thought. He loved the flavor (a little KICK to it) and they don’t have a weird casing.
Let’s be honest… he loves that they are pre-cooked. But I love that they are 1) gluten free 2) have 30% less sodium and 70% less fat than regular sausage.
“Get more if you can,” were his exact words.
Unfortunately, my local store doesn’t carry that flavor, but I did stock up on al fresco breakfast sausage and their chicken bacon which is to die for. It’s waaayyyy better than turkey bacon. More like the real deal of pork bacon but without alllllll the fat. Still crispy and great flavor!
I decided to just use the chicken bacon on pizza instead! Bacon makes everything better, right?!
I love this version with a flatbread because it keeps the carbs lower and they are just amazing on the grill. I lightly spray each side of the Flatout with olive oil and toss on the grill (low) until they are a little crispy.
Don’t put your sauce on before doing this, it will get soggy. Once crispy, remove them from the grill and add your toppings.
I opted for hummus instead of pizza sauce.
Then layered on chicken, peppers, mozzarella cheese, red onion, Al Fresco Chicken Bacon and put it back on the grill. Once
it was all melty I couldn’t wait any longer, I drizzled some Sriracha on top and face planted.
