Who’s ready for the nine dozen hard boiled eggs you will have overflowing the fridge?!…  We’ve been dying, painting, glittering, stickering them and of course eating them.

I never get sick of them and maybe it’s because I am creative?  I figured I could help you out in that arena today with some ways to eat them up after Easter.

The most common way you will see those hard boiled eggs devoured around Easter is deviled eggs and I have a few (healthier) tasty versions to try: Bacon Jalapeno and Sweet Chili Bacon & Balsamic!

Before you boil and spend hours peeling all those eggs…

LIFE HACK! MY TRICK TO PEELING EASILY:

Immediately after boiling I transfer the eggs to a large bowl of water and ice or ice packs.  Let them sit until they are room temp.  They peel perfectly every time.

Bacon Jalapeno Deviled Eggs

Ingredients

  • 4oz fat free cream cheese (softened)
  • 4 pieces Al Fresco chicken bacon (cooked and chopped)
  • 2 pieces green onion (finely chopped)
  • 1 tablespoon Chobani plain non-fat Greek yogurt
  • 1 tablespoon dijon mustard
  • 3 tablespoons avocado (mashed)
  • 1/2 teaspoon ranch seasoning
  • 1/2 Medium jalapeno (seeded and finely chopped)
  • 2 tablespoons Cholula hot sauce
  • 6 Large hard boiled eggs

Directions

In a bowl, combine 3 pieces of bacon, cream cheese, onion, yogurt, mustard, avocado, ranch seasoning and jalapeno. Mix together well. Spoon into a small plastic ziploc and close tight. Snip the corner of the bag with scissors to pipe the mix into the eggs.
Slice the eggs in half and remove the yolk. Discard the yolk or save for another recipe.
Pipe the mixture into each egg until they are full and the bag is empty. Arrange the eggs on a decorative plate and top with the last piece of bacon (crumbled.) Finish with a drizzle of Cholula sauce.

Sweet Chili, Bacon & Balsamic Deviled Eggs

Ingredients

  • 4oz fat free cream cheese (softened)
  • 1/2 teaspoon garlic (minced)
  • 3 green onion (chopped)
  • 4 pieces Al Fresco chicken bacon (cooked and chopped)
  • 2 tablespoons Chobani plain non-fat Greek yogurt
  • 6 Large hard boiled eggs (keep 3 yolks)
  • 1oz goat cheese (optional)
  • 3 tablespoons Asian sweet chili sauce
  • 1 teaspoon balsamic vinegar

Directions

In a bowl, combine the cream cheese, green onion, garlic, bacon, greek yogurt and yolks from 3 eggs. If you want, you can fold in goat cheese for extra flavor. Discard the other egg yolks or use in a different recipe.
Put the mixture into a small ziploc bag and seal tight. Snip the corner so that you can pipe the eggs with the mixture. Fill each egg half with the mixture until it's gone.
In a another bowl, combine the sweet chili sauce and the balsamic vinegar. Lay the egg halves on a decorative plate and serve with a drizzle of the sauce on top of each egg.
